Ginger Turmeric Lemonade




INGREDIENTS

  • 950 ml (4 cups) water divided
  • 1 piece (about 2 inches) of fresh ginger peeled and sliced
  • 1 piece (about 2 inches) of fresh turmeric peeled and sliced
  • 3 lemongrass stalks outer leaves removed and cut into 3 to 4 inches pieces lengthwise
  • a pinch of freshly ground black pepper
  • 1 1/2 tablespoon organic raw honey plus more as needed. Use maple syrup for the vegan version
  • the juice of 2 lemons
  • ice


DIRECTIONS

  1. Add the ginger, turmeric, lemongrass, and black pepper to a small saucepan with one cup of water and bring to a boil.
  2. Once the water starts to boil, reduce the heat and simmer for about 10 minutes.
  3. Strain the liquid through a fine mesh strainer into a large pitcher and discard the solids.
  4. Let it cool then add the remaining water, lemon juice, and honey and mix to combine. Taste and add more honey if desired.
  5. Serve the lemonade over ice! Enjoy!
